Vanilla Oak Summer Granola Crisp

Just in time for summer and that 4th of July celebration coming up with your friends!

I created this recipe to use up a few apples I had that I didn't want to go to waste and it turned out to be oh so good!

This recipe is super easy and delicious.


I can't wait to sit outside with a friend and share a fresh baked berry crisp and scoop of local icecream.


This reminds me of grandma's baking. She would always use berries we had picked from the garden or apples from the tree on the corner. Lunch and dinner always ended with a generous helping of dessert.

Summer Nola Crisp Recipe:

 

gluten free, low glycemic, vegan


Course: Dessert

Total time: 90 min

Servings: 12


Filling:

5-6 cups sliced apples, berries, or both

1/8 cup pure maple syrup

2 tsp cinnamon

2 TBS fresh squeezed lemon juice * add a little zest for more flavor!

1 tsp fresh grated ginger root

1/8 cup kombucha of choice *Vanilla Oak - Brew Dr. Kombucha adds a nice essence

4 TBS arrowroot or cornstarch

1 TBS Vanilla Bean Powder


Topping:

1 1/2 cups local Kitchfix granola * I love cocoa sea salt because it has bits of berries and pumpkin seeds

1/2 cup almond flour * I used Bob's Red Mill super-fine blanched

1/2 cup gluten free all purpose flour

1/3 cup pure maple syrup or date syrup

1/3 tsp sea salt

2 tsp cinnamon I am generous on my cinnamon usage so feel free to reduce amount if you prefer

Instructions

  1. Preheat oven to 350 F

  2. Cut apples thinly and add to a large mixing bowl with other filling ingredients.

  3. Lightly cover a 9x13 pan with coconut oil. Fill it up with your apple or berry filling.

  4. Mix together topping ingredients thouroughly, and spread evenly over filling.

  5. Bake for 50 min or until bubbly around edges. Keep in mind with more cinnamon it will appear to be a darker brown color.

  6. Let cool for at least 20 minutes before serving. Can be served warm or chilled. Highly recommend topping with ice cream!
